We had April showers last weekend and cold, gloomy winter weather came back to haunt us for a day or two. Then Monday rolled around and the weather cleared up almost instantly. Today, we had sunny skies and warm summery weather so I sent the dogs out to play.

30-minute dinner: Crunchy Orzo Salad + Quick Italian Chicken

With the kids back at school and our weekly routine back in full swing, I'm back to making quick weeknight dinners, except this time, I'm aiming to make them even healthier. Last night's dinner was whipped up in 30 minutes...no kidding! Ok, maybe 45 minutes tops but if you're a fast mover in the kitchen like I tend to be, 30 minutes will be all the time you need.

Not for me.  For one it’s summer.  Secondly, I was busy with household chores today.  For some reason I decided to skip the chores during the weekend and decided to do them today.  For dinner, I decided to make this not so easy dish.

Tonight was store bought taco night---Baja Fresh to be precise.  My freezer is running low.  It’s been about a month since I did my last big shopping.

Wow, it's July already! Time's been zipping by this year, faster than ever. July means hot summer weather and of course, fireworks. We had plenty of both yesterday when a bunch of us got together in my home to celebrate Independence day. The boys (young and old) excitedly indulged in their fascination with watching things light up on fire and explode while us gals sat back and chilled out on lawn chairs, occasionally twirling a sparkler here and there. Fun times, I tell ya!
